ProfessorI am conducting research to clarify the biological defense functions of food components such as the suppression of chronic inflammation and the improvement of lipid metabolism, and their molecular mechanisms. My focus is on fermentable indigestible polysaccharides and phytochemicals that improve a healthy gut environment. Since chronic inflammation is a major contributor to the development of various diseases, I aim to prevent dementia and lifestyle-related diseases by elucidating the functions and mechanisms of food components that prevent inflammation.
Recent Topics of Interest:
The relationship between food components and the gut-brain axis. It has become clear that the intestinal environment also affects brain function. My research suggests that certain food components may modulate brain inflammation by improving the gut environment. In the future, I aim to investigate the underlying mechanisms in greater detail.
